I started this week with one whole chicken purchased at Aldi’s for $3.53. I roasted it in the oven on low heat all morning on Wednesday. Once it was done and slightly cooled I cut up the chicken and set it aside for dinner. I reserved one and a half of the breasts and cubed it up for a later use. I poured the bones and all the juices into a pot and set it to boil. I let the broth cool overnight in the fridge and removed the fat from the top. Now the broth will be frozen for a soup or chicken and dumplings later and the cubed chicken will be used in chicken and rice tonight. Three meals for only $3.53!!! It doesn’t get much better than that.
I do that a lot with chicken. It is very economical, and there are like a million recipes you can use chicken and/or chicken broth in.
