Homemade Macaroni and Cheese

In my journey to feed my family better and to continue to replace anything that I used to buy in box or package with “real” food I knew the day would come when I must bid farewell to the ease and convenience of boxed mac and cheese and start making homemade macaroni and cheese. And I drug my feet for the longest time, and I really don’t know why. It turns out it is much simpler than I thought and almost as easy and fast as the boxed stuff.

But, when I make the homemade macaroni and cheese I know what is in it. There is no dye, preservatives or ingredients that I can’t pronounce in the lunch I am feeding my children. And because I am using real cheeses they are getting a dose of calcium too. One thing that I have learned on this journey though is that you must watch labels carefully and cheese is no exception. Be sure that you are buying real cheese and not a cheese “food product”.

Here is the recipe as I made it the other day. Feel free to play around with other cheeses and add in’s for continued fun and variety! I hope you enjoy it and come back and share with me what your family thought about the recipe.

Homemade Macaroni and Cheese

8 oz of pasta (cooked and drained)

1/2 cup shredded cheddar cheese

4-5 slices of American Cheese

2 TBSP butter

6 oz milk (whole, evaporated or whatever you have on hand)

Combine all ingredients in a heavy saucepan and stir and heat until cheese melts. Stir it often during the melting process to prevent sticking and clumping.
