Macaroni Salad
Dressing –
2 cups mayo or miracle whip
1/2 cup sugar
1/4 cup vinegar
3 tsp mustard
1 can sweetened condensed milk
Salad –
1 1/2 pound elbow macaroni (cooked according to package)
1 green pepper, diced
1 onion, diced
1 carrot, grated or diced
6 hard boiled eggs, diced
Combine all salad ingredients. Blen dressing until smooth and pour over salad reserving 1 cup. Chill in fridge and add the last cup of dressing right before serving.
I love this salad! Sometimes for picnics, potlucks, etc I step it up a notch and stir in 2-4 cans of tuna depending on how much protien I want to add and a couple handfulls of shredded cheddar. It is AMAZING this way and then it is a complete meal! Grab some bowl and spoons and a bowl of this salad and you are ready for a picnic!
