Homemade Mini Tarts

The other day Samantha and I set to work in the kitchen for a little mother daughter time. And  set our sights on some little mini tarts that would be fun to make, cute to serve, and easily transportable to our next potluck meal. And we hit this one out of the park. Everyone loved them and they were easy for her to help with and gave her a great sense of accomplishment. This mini tart recipe uses very simple ingredients and can be either all homemade or all store bought depending on your time and desire.

These cute little mini tarts only use pie filling, pie crust, and a simple crumb topping. Samantha and I made our crust from my Grandma’s recipe that I have been using since I was a young girl baking with her in her kitchen and we had some frozen blackberries in the freezer that we had picked last summer that we used for the filling. But you could easily used canned filling and store bought crust if that better suits you.

Pie Crust

2 cups flour

2/3 cups shortening or butter

5-6 Tbsp ice cold water

Combine all ingredients in a food processor with a dough setting or in a large bowl with a tight fitting lid. Shake the bowl or pulse the processor until stiff dough balls form. Turn out onto a floured counter and roll to desired thickness.

For these mini tarts we used one batch of this pie crust dough and the frozen blackberries that we sweetened with sugar. We rolled the dough out VERY thin and cut it with a large coffee cup to make circles just slightly bigger than our muffin tins.

Place the dough circles into the greased muffin tins.

Then we greased the muffin tin, placed the dough circles into each well, and placed a small scoop of pie filling into each crust.

Use enough filling to fill each tin about half full.

Then we used a mixture of cold butter, flour and sugar to make the crumb topping that Samantha then sprinkled on top.

Fill the tin to the top with the crumb topping.

We then baked them a 400 degrees until the filling was bubbly and the crust was golden. Then, using a fork we transferred them to a plate to cool.

Like I said, if homemade pie crust and frozen berries isn’t your thing just use store bought pie dough and canned pie filling for these yummy homemade mini tarts and you can still enjoy a fun time in the kitchen with your children!
