This yummy side dish was born out of my desire to eat more rice because of the low cost of this yummy ingredient but also to stop buying all those packages of sodium laden flavored rice from the store. This Creamy Chicken Rice makes a great side for almost any meal and yet if you stir in some chopped chicken and maybe some peas or broccoli can also easily be a stand alone lunch for the children.

Creamy Chicken Rice
2 cups rice (parboiled long grain is my favorite)
4 1/4 cups water
4-5 chicken bullion or use yummy homemade chicken broth instead of water
2 tsp parsley
1/8 – 1/4 tsp poultry seasoning
3 TBSP butter
Add all of the ingredients into a pot with a tight fitting lid. Bring to a soft boil and cook for about 20 minutes until the water is gone. This works best if you just follow the directions for the type of rice that you are using.

See, now wasn’t that easy. It is a one pot dish that only takes about 20 minutes to throw together. And let’s be honest those flavored pouches from the store take almost that long! But this way you know what is in that bowl of rice that you are feeding to your family at dinner instead of just guessing at how to pronounce some the ingredients in the list.
