I love using my crockpot all year long. But I am attached at the hip with my crock pot when I am pregnant. By the end of a busy homeschool day I am so glad on the days that it has been busy cooking dinner while I was accomplishing other things and there is little left to do.
I came across this crockpot recipe lately and I loved it at first sight! I love the ease and frugality of rice and beans and I love any dish with a little “kick” to it. So this red beans and rice recipe with yummy sausage and wholesome beans was sure to please me taste buds. Though I wasn’t sure about the children!
I was so surprised! All of my children loved it and we ended up having three extra children for lunch the Sunday that I had made this. And they all loved it as well. This made it a true keeper in my book!

Crockpot Red Beans and Rice

1 pound dried red beans

7 cups water
- 1 green bell pepper, chopped
- 1 medium onion, chopped
- 1 tsp celery salt
- 3 garlic cloves, chopped
- 1 pound smoked sausage, sliced
- 1 1/2 – 2 Tbsp Creole seasoning
- Hot cooked rice
Combine all the ingredients above in your large crockpot. Cook on low for at least 8 hours ( I cooked mine closer to 12 and it was amazing!) Cook rice according to the directions. Serve!
